Bump version and appVersion for audiobookshelf chart

Updated the version to 1.12.1 and appVersion to 2.32.1 in the
Chart.yaml file for the audiobookshelf Helm chart. These changes
reflect minor updates and improvements in the application. Keeping
the chart's metadata up-to-date ensures compatibility and allows
